Sophorolipids are glycolipid biosurfactants produced by yeast metabolism, renowned for their low toxicity, biodegradability, and environmental friendliness. They are among the most extensively studied biosurfactants with significant market potential. Structurally, sophorolipids can be categorized into two types based on 1,4-esterification: lactonic and acidic forms.
